    1. Hi Kristin, Thank you for sharing your recipe. I had accidentally deleted the link up code! (Oops.) It’s fixed now though.

I hope that your healing goes really well. It’s exciting to look forward to feeling better, isn’t it?

  1. Hi, Elana!

While these cookies look AMAZING, neither baking soda nor agave are GAPS friendly!

One could easily substitute honey for the agave but I don’t know what would be a GAPS friendly alternative for the baking soda. Baking soda is only acceptable for very specific health issues, not (unfortunately!) for baking. :(

I know when combined, baking soda and apple cider vinegar work well as a raising agent, but would apple cider vinegar alone work?

I am really, REALLY, wanting home made cookies right now and would love to be able make these!

    Thank you!
    Trish

    1. Hi Trish,

I just want to let you know first that this website isn’t Elana’s, but mine (Hannah). :) Her website is found through the cookie links under the picture.

Second you said that baking soda and agave aren’t GAPS friendly. You are correct that agave isn’t but I said before I posted links to her recipes “Elana’s Pantry (will need some tweaks to make them GAPS safe, like turning agave and yacon into honey)”

But I want to let you know that baking soda is safe for on GAPS. If you look at the Foods to Avoid List in the GAPS book it says quote, “Baking powder and raising agents of all kinds apart from pure bicarbonate of soda” (emphasis mine)

Personally I think they should list bicarbonate of soda (baking soda) on the Allowed Foods List as the only raising agent allowed, since it can seem confusing.

I hope this helps you to know that by switching the recipes from agave or yacon to honey and to a better oil/fat you can make these GAPS safe. But here are some of my GAPS safe recipes that are some of my favorite cookies on the diet (I can completely understand the craving for them on the diet!)
      Pecan Shortbread
      Mock Oatmeal Raisin Cookie
Cranberry Orange Scones (turns out like a cookie)
