Easy, 6 Ingredient Banana Muffins (GAPS, Paleo)

I’ve been thinking about bananas lately, and what types of recipe to do with them. Reading a banana ice cream recipe probably had something to do with that.

So here is a banana muffin recipe – it’s claim to fame is it only takes 6 ingredients and the only sweetener is bananas!

Sweet! (yes, I’m being funny…)

[title]Banana Muffins (GAPS, Paleo)[/title]
3 bananas, ripe
3 organic eggs
3 1/2 cups almond flour
1/4 tsp sea salt
1/2 tsp baking soda
1/4-1/3 cup coconut oil, melted

Blend the wet ingredients. Mix the dry in a bowl with a fork or whisk. Combine the wet and dry then scoop into a lined muffin pan and bake at 350º F until lightly brown (it should spring lightly back when touched). Remove and let cool. Enjoy warm or cool!

You can keep these on the counter for a day or two then you’ll want to move them to the fridge.

Note: you can add other flavors if you want, but this is a basic muffin, (and tastes great with butter).

    1. Zosia you aren’t annoying me a bit. :) I’m not usually overflowing with questions, and I want to help any way I can. Stevia to my knowledge isn’t allowed on GAPS, but I will look into it a little more and hopefully get a more complete answer.

        I am new to your blog and only considering starting GAPS due to digestive problems – but of what I have seen so far – your recipes and information is great!

        I have been a huge advocate of food combining in order to help my digestion – but it seems that with GAPS – there are not food combining rules – as in – eggs are mixed with bananas, etc. However, with food combining you keep fruits with fruits, starches away from proteins, etc. This is also making me nervous about starting GAPS…I suppose it shouldn’t really be a problem that GAPS isn’t a ‘food combining’ type diet because it heals in different ways!

          You’re welcome. I agree that food combining can definitely help with digestion and just so you know there are some food combining tips/or rules if you will in GAPS as well. Namely not eating raw fruit with protein while cooked fruit is okay, and of course if you felt you did better eating that way listening to you body is always a good thing to do (you can always branch out later).

          If you want to just start some simple things to see how you do incorporating bone broths (or meat stocks) can be an easy thing to try. They help the digestion a lot.

    1. Hi Zosia, I forgot to write it down (oops… I’m still getting used to writing recipes). I believe the recipe makes 12-15 (2 tsbp size muffins, that’s the size of our scooper), but sometimes it can change by a couple depending on eggs, bananas, etc.
